We love just about any variety of potato, but these might be our new favorite!
1. Wash and dry potatoes. We used Yukon gold, but russet work too! Use a fork to poke holes in potatoes. 🍴
2. Microwave potatoes for 5-7 minutes depending on how many you are making. They should be soft enough to scoop out the inside. They’ll be HOT, so please be careful 🔥
3. After scooping out insides (use those for either twice baked potatoes or mashed potatoes) spritz potatoes with avocado oil and sprinkle with salt/pepper
**If you want to make twice baked, mash the extra filling with salt pepper and butter, and replace back into potato before air frying 😍
4. Air fry on 400°F for 6-8 minutes. This will depend on your potato type, and how crispy you want them!
5. Remove with tongs and sprinkle with toppings of choice! We used cheddar cheese, but my meat eating fiancé would’ve liked to add bacon! Place back in air fryer for 2-3 minutes until cheese is melted. Carefully take out with tongs when done.
6. Top with green onions, sour cream, and whatever else your heart desires!
